Ingredients to Make Apple Pie Chia Seed Pudding
This protein packed recipe is my go to recipe for breakfast and bonus points because my kids love it too! I use the chia seed pudding recipe as a base to make any flavor variation such as the Strawberry Chia Seed Pudding in the summer.
For the Chia Pudding:
- 1/2 cup chia seeds
- 2 cups unsweetened almond milk (or milk of choice)
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- Pinch of salt
For the Date Caramel Sauce:
- 1 cup pitted Medjool dates Soaked in Warm Water
- 1/2 cup warm water or milk of choice. I love the texture and flavor from full fat coconut milk.
- 1/2 tsp vanilla extract
- Pinch of salt
For the Apple Pie Topping:
*this comes from my Apple Pie Cookies
- 2 Granny Smith apples, peeled and diced
- 3 tbsp brown sugar or coconut sugar
- 1 tbsp butter
- 1 tsp cinnamon
- 2 tsp cornstarch mixed with 1 tbsp water

2. Prepare the Chia Pudding

- Let sit for 10 minutes, then whisk again to prevent clumps.
- Cover and refrigerate at least 2 hours or overnight until set.
3. Cook the Apple Pie Topping
- In a small saucepan over medium heat, melt butter and add apples, brown sugar, and cinnamon.
- Cook for 5 minutes until apples slightly soften.
- Stir in cornstarch-water mixture and cook for 2–3 more minutes until thickened. Remove from heat and cool slightly.
4. Assemble the Chia Seed Pudding
- Layer chia pudding in serving glasses.
- Add yogurt, if desired.
- Drizzle with date caramel sauce.
- Top with warm apple pie filling.
- Optionally, garnish with chopped nuts or a sprinkle of cinnamon. Serve chilled or at room temperature.
Tips for Success
- Soak the chia seeds: Make sure they sit for at least 2 hours to fully absorb liquid.
- Adjust sweetness: Taste both the pudding and the caramel sauce — add more maple syrup or water if needed.
- Use tart apples: Granny Smith works best to balance the sweetness of the caramel.
- Make ahead: Pudding can be prepared up to 2 days in advance; store apple topping separately and assemble before serving.
