While the cookies are cooling, beat together the cream cheese and butter until smooth. Gradually add in the powdered sugar, heavy cream, and vanilla extract, beating until fluffy. - Cinnamon-Sugar Coating:
Mix the granulated sugar and cinnamon in a small bowl. Once the cookies are cool, roll them in the cinnamon-sugar mixture. - Frost and Serve:
Pipe or spread a generous layer of cream cheese frosting on each cookie, then sprinkle with a little extra cinnamon-sugar for garnish.

Tips for Making The Perfect Churro Cookies
Storage: Store cookies in an airtight container for up to 3 days and place in the refrigerator (cream cheese frosting needs to be refrigerated). You can also freeze the cookies for up to 3 months- place in a freezer ziplock bag.
Chill the Dough: Chilling helps the cookies hold their shape and enhances the flavor but it’s not required. This dough is a bit sticky at room temperature but they turn out great.
Adjusting Chai Spice: Feel free to increase the chai spice if you prefer a stronger flavor. You can also try adding a pinch of cardamom for extra warmth.

Serving Suggestions
Try serving them slightly warmed for an extra soft and chewy texture! Or Pair these cookies with a cup of chai latte or coffee for a delightful treat.

Yes! The cream cheese frosting can be made a day or two in advance. Just store it in the fridge and bring it to room temperature before spreading it on the cookies.
